How to make pumpkin or pumpkin puree

If you like mashed potatoes but are on a diet or want to eat something lighter than all potato starch and carbohydrates is an excellent idea prepare “orange puree”, so they say in restaurants to the simple and exquisite pumpkin or squash puree. But you can also prepare it at home by following the steps in this recipe for which we use pumpkin anco, to my taste the tastiest.

3 people 45 minutes Low difficulty Ingredients:
  • 1 pumpkin of 1 kg
  • 30 grams of butter
  • Olive oil
  • Salt to taste

Peeling the pumpkin is the most difficult, in my case I use a pelapapas after washing the peel well, since removing the peel after boiling it can be a headache. If you are not sure about the steps to follow, be sure to read this other article on how to peel a pumpkin.


The pumpkin, after peeling it, looks like this.


Once peeled, cut the squash into slices and remove the seeds from the hollow area.


Add the slices in a pot with boiling water and salt.


When the slices are very tender we strain them very well (attentive to this). Then we put them back in the pot and add the butter and step on a fork to transform the pumpkin into mash.


Now we will notice that the pumpkin leaves water ... Then, we have to put the pot back on medium heat so that the water evaporates.


With a wooden spoon we stir the mash so that it does not burn ...


We continue stirring until all traces of moisture are gone. Finally we add a little olive oil, stir, and ready to serve.


Now to enjoy something delicious and healthy, like a chicken Milanese :)
